In 1634, the monks of St. Francis of Paula began their tradition of brewing using only the four main ingredients in beer in Munich. They began to sell their beer commercially in 1780 and named their Doppelbock after the Savior, in Latin, Salvator. This beer is the original Doppelbock. Competitors began tacking the suffix, ator to the ending of the name of their strong doppelbocks to pay homage to the originator of this style. Salvator is available all year but has ceremonial tapping in the spring. A full, creamy, light beige head ascends over a deep amber beer with nuances of autumnal colors. A huge malt aroma assails the nose, sweet, complex and a hint of smoke. The malty palate is rich and luscious and the well-balanced sweetness plays and lingers on the taste buds. Salvator blesses us with a long ending which rounds out to a dry malt aftertaste, alcohol and a hint of Hallertau hops. This Doppelbock is a must for all Oktoberfest celebrations!
